I just wanted to let you know that the problem is solved for me. I had to upgrade to BE2010 R2, and now it's fine.
VMX file still does not appear in the listing when creating a restore job, but it is correctly restored along with the VMD...

Please also notice that Symatec seems to be working in implementing GRT restores without staging (=directly from tape). That would be top cream.

No updates, still working with Symantec support. However, please note that in my case I have no performance issue with backups (whether AVVI or traditional). I only experience a big performance issue when restoring using GRT.
