I've confirmed my suspicion detailed above. If you're having this problem, use an account with all of the privileges that RahulG listed above, but don't use it for just the Information Store, use it for everything on that server. Thanks again, Rahu...

Last night's backup worked using maximum privileges for all items on the Exchange 2003 server. I've switched it back to just the IS now and we'll know on Monday if that doesn't work, confirming my hypothesis.
